I remember my mom making these
Old fashion Divinity Candy INGREDIENTS :: 2 1/2 cups granulated sugar 1/2 cup water 1/2 cup light corn syrup 1/8 teaspoon salt 2 egg whites, at room temperature 1 cup chopped pecans - I chop them up pretty small 1 teaspoon vanilla INSTRUCTIONS:: Line a cookie sheet with parchment paper or a and set aside. In a large saucepan over medium heat, combine the sugar, water, corn syrup and salt and cook, stirring occasionally, just until the mixture starts to boil. Then clip a candy thermometer to the side of the pan and continue to cook without stirring until the temperature reaches 260 degrees F, about 8-10 minutes. While the sugar mixture is cooking, beat the egg whites on high speed using a stand mixer with a paddle attachment until stiff peaks form. Once the sugar mixture reaches 260 degrees, remove from heat and very slowly pour it in a thin, steady stream, over the egg whites while mixing on high speed. It should take about 2 minutes to pour the hot liquid over the egg whites, so go slow and don't rush this step. Continue to beat on high speed for another 5-8 minutes until the candy loses some of its glossiness and starts to hold its shape. You can stop mixing and test a small amount of candy by dropping a small spoonful of it onto the parchment paper to see if it holds its shape in a nice mound with nice swirls on top or if it melts down into a puddle. Continue to beat a minute or two longer if the divinity doesn't hold its shape yet, test again. Mix in the vanilla and the chopped pecans when the candy stays in a mound instead of melting into itself. Using two spoons sprayed lightly with cooking spray, drop tablespoon size scoops of divinity onto the prepared baking sheet, using one spoon to scrape the hot candy off the other spoon. You will want to work quickly while the candy is still hot. Let the candy set. The outside gets hard.

· December 26th! Happy Boxing Day! Today also marks the second day of Christmas leading into the twelve days of Christmas. Boxing Day is a special holiday with a fascinating history celebrated in many countries by the commonwealth and a national holiday. It all started back in the Middle Ages when the wealthy bosses would give their hardworking servants and tradespeople "Christmas boxes" filled with useful gifts as a way to say thanks for their year-round efforts. Imagine the warm feeling of appreciation! The church also played a role, opening their donation boxes on December 26th to help the less fortunate. As time passed, Boxing Day became even more exciting, with thrilling sports events, awesome shopping sales, and heartwarming family get-togethers. This holiday, rooted in history, continues to enchant those who love tradition's timeless charm. #boxingday #seconddayofchristmas #historylovers So I have never understood the saying (FLEETING MEMORIES) This morning as I am making breakfast for my family all the random thoughts running through my head. I thought of a post that I had shared this week. it was a meme of a Christmas stocking full of fruit it is such a simple gift that this was when I was young I and not sure if this is a full memory or something that I took part of the truth and created a better more colorful version. Well, anyway the thought that I believe to be part truthful I am pretty sure I did color in a little. It is a pretty simple thought that I remembered but I remember on one Christmas morning as a child receiving fruit and assorted shell-on nuts in my stocking and of course, being a child did not care for that because even with that stuff taking up A lot of space there was still room for all the wonderful things that my mom would put in my stocking.... the large peppermint barber pole that I would have to eat by breaking pieces of it and making it last as long as I could, the amazing and always anticipated LifeSavers Hard Candy Sweet Story Book and of course the assorted chocolates wrapped in festive colors. Well anyway during this one morning I remember my mother taking one of the oranges and peeling it separating it on a paper plate peel on the left, (my mom peeled that orange perfectly) the peel came off in one piece and on the right, the orange was seperated and laid out piece by piece on the plate. After she had finished eating her orange I remember my mom eating the peel something she had done forever but in that moment the moment that made me so grateful was I remember my sister Joanne being there with me and I remember her and I just laughing. But what I do know from this memory whether it is real or maybe a little colored in it reminds me how very important my mom and sister Joanne are and have been in my life and I want to send prayers to my mom and this for my sister. Joanne, you are amazing and I wish you a very Merry Christmas Love your brother The best part of this whole story is I still really do not know what fleeting or fleeing memories really had to do with this but can only imagine what it means to hold on to your good memories for as long as you can. · REVIEW: An older Review from 2021, a request from a follower. Nantucket Noel - Hallmark Tensions rise when a woman falls for the son of a developer who wants to tear down the wharf that is home to her toy store. Trevor Donovan stars as Andy a developer whose project will redevelop the wharf where Christina’s (played by Sarah Power) toy store is located as well as the Cafe owned and run by her friends. To quote the movie, ‘With all due respect, that sounds like a cliche.’ Andy’s father is driving the project and is painted as a cranky old man but in reality he is just sad - Christmas is a time of sadness for him following the passing of his wife the last year. Andy is a little caught in the middle. He needs to push forward with the project, but at the same time feels sympathetic to the ‘Shedders’ (store-owners on the wharf who’s shops are the old, converted fishing sheds). Christina tries throughout the movie to try and save the shop her mother ran before her at all costs which starts to hold up the project. She won’t entertain any other options but to save the shop. This one was OK. Not bad, not great. Probably the biggest missing piece for us was a lack of any real chemistry between the two leads. We think it may also hold the record for the number of times the word ‘Wink’ is used in a movie. 5 and half Christmas Trees out of 10. You might like it more though if you don’t watch as many Hallmark Christmas movies as we do each year and see this same storyline played out many times. The King of Solar Screens

· Holiday in the Vineyards - Netflix This movie is about a widow Val who struggles to keep the local vineyard running while raising two young boys. She may be in store for a Christmas miracle when she falls for a big city playboy a large vineyard owner who is sent to secretly get intel by his mother Margot (Eileen Davidson of Young and Restless and the Real Housewives of Beverley Hills fame). The Baldwin vineyard makes wine that is so terrible that they themselves refuse to drink it. Spoilt son of the Baldwin vineyard owner is charged to go and scout out the only vineyard in the area not owned by the Baldwins inorder to secretly buy it The son Carter has recently jilted his fiancé/wife at their wedding and his mother wants him to prove that he can run the business he will one day inherit instead of just enjoying spending all the money he gets being the son of the business owner. When he arrives to scout out the vineyard for sale he meets a realtor who is adamant they are not going to sell to Baldwin wines. Carter ends up going undercover pretending to be a carpenter who is going to stay in her house in return for fixing it up she is *SHOCK* a widow and he fixes (very poorly) the house and bonds with her two young boys while she is at work. That doesn't sound like potential for child safety violations at all does it? We are a third of the way in and there has been zero signs of Christmas. We feel like Netflix has a Christmas-catfished us! Turns out our realtor widow’s husband was a novice winemaker and she has a bunch of old bottles in her garage but now, the evil Baldwin wines buys all the good grapes in the area. How very dare they! She doesn't know if any of the dead husband’s wines are any good but it just so happens that our fake carpenter happens to know a lot about wine... This movie is exactly as predictable as you think. There are no surprises except for the fact that it is billed as a Christmas movie and there is about as much Christmas in it as there is snow in the desert. The movie drags on and with 16 minutes to go, we start to see a scene where Carter dresses as Santa and they attend a Christmas party but really this has to be in the movie so they can bill it as a Christmas movie otherwise we doubt people would watch this movie. Honestly if you're looking for a movie to watch that's a Christmas movie don't bother. If you're looking for a cheesy movie where you don't need to think at all, that you could just have playing in the background this is it. This is a Mills and Boon movie. it’s cheap, charmless, and chronically banal. the only highlight is the guy at the Hardware Store who is somewhat funny. · REVIEW: 12 Games of Christmas - GAC Family Network A group of friends are magically transported inside a Christmas-themed board game during a holiday party. They must play through the game's levels to return home. They work together to survive and escape back to reality. Great concept. Way left of centre. Just a little over-done and under-done at the same time. Kelsey’s house is over-decorated with no explanation as to why. We were waiting for it, because it is it was weird, but it never came. Pretty much everyone is guilty of over acting at multiple points which caused us to cringe. Simultaneously, the games are all under-done in terms of any sense of danger or adversity to be overcome. This is the sort of escape room experience that we reckon a drunk four year old could overcome. These were more like the 12 Lames of Christmas. To be fair, the Jumanji franchise essentially blew the lid off this concept to the point it would be next to impossible for any other movie to come along and succeed. That being conceded, this is an incredibly benign and safe handling of what could have been a really interesting adventure story. After a stellar debut 2022 season, it feels like GAC played it super safe, and as a result, a little bland this year. On the positive side, the universe inside the 12 Games of Christmas is represented magically and beautifully. And there are some nice nods to the past. We just wish they hadn’t played it so safe. Sadly was not a fan of this one. It was so sugary sweet throughout, we felt mildly diabetic by the end. 3 Christmas Tress out of 10. Christmas Movie Reviews
· REVIEW: Sealed With A List - Hallmark Channel This holiday season, festive Carley sets out to conquer her list of abandoned resolutions from last year. Aided by co-worker Wyatt, the lazy, spoiled brat, son of her boss, she finds love and the confidence to chase her dreams. A major mess-up at work, caused by Wyatt’s negligence causes both Carley to be fired as she takes the fall for his mistake and Wyatt to be cut off by his Father unless he can prove himself. As a result, both Carley and Wyatt find themselves in difficult circumstances and swing into action. Wyatt begins to help Carley finish her list of resolutions by Dec 31. This was quite different from what we expected. The premise is strong, the script clever, and Carley and Wyatt are very likeable (at least once Wyatt is fired) and their interactions and dialogue are quite charming. The backing sound-track is great with upbeat songs behind montage sequences. This movie also has the most eclectic, unique, and charming supporting casts of the season, with rich characters who make their mark despite limited screen time. This is a really refreshing story of redemption, discovery and the courage to just take a chance. 8 Christmas Trees out of 10. Lighthouse Christian Ministries
