Chef Jimmy has ran and operated several restaurants over the last 35 years. He is a self-taught chef learning as he has worked. Chef Jimmy started cooking as a young child. Living in a single family home with an older brother and sister that helped raise him as their mother went to school and work a low paying job. The kids learned how to maintain a house and cook for themselves as to help out there mom. As Chef Jimmy grew in age so did his curiosity for bigger and better things. He left his mother’s nest at the age of 14 and moved to Texas with his Father. By the time Chef Jimmy was 15 he was washing dishes to earn extra money at a restaurant in Alvin Texas (Two Flags Cafe) the owners had an American buffet and also some oriental food that the owners cooked. Jimmy went into work one morning to find out that the cook did not show up for his shift and the owners informed Jimmy that he was the new cook for the buffet. The first week Jimmy had no clue what he was doing but everyone was patient and he started cooking for the buffet for the next year. This was the start of something that Jimmy had no idea what to expect. As Jimmy grew older he started to take on various different tasks in local small restaurants learning all that he could. Chef Jimmy new that the restaurant bug had not only bit him but held on. At 17 Chef Jimmy landed in Chicago moved out on his own and decided to take Chicago by storm. Of course it was not ready for him to do that so he settled for a few short stints as a grill cook for a small 24 hour diner. The diner taught him how to cook all aspects of food with different cooking times and temperatures. Jimmy then started to take this business as a career and not just a job. Jimmy took over his first kitchen as Chef not really knowing what it entailed he took the job and learned as he went. For several years when he thought of running a kitchen he thought it would be easy street and it was not his first year Jimmy learned so much more as he covered shift after and not just for his cook’s dishwasher and the bus staff as well. Jimmy thrived to make sure that his kitchen was well manned so at times he would put in 7 days a week for months at a time from open to close. As the years went by Chef Jimmy started using the knowledge from this and started taking on bigger places with more options of learning different cooking styles. Chef Jimmy has ran many fine kitchens has owned and operated his own. Also has had many years of catering. At one time Jimmy owned and operated Tye Dye Chef Catering serving the Chicagoland and also has served several parties in the San Diego area. Chef Jimmy has worked as a private Chef Instructor on the north side of the Chicagoland area. Chef Jimmy has now started a mission that can give something back to children and families. He has started a Kid's cooking class that he hosts once a month where kid's and parents can learn to get along in the kitchen and start some lasting memories of what a family can be. This is something that Chef Jimmy would like to see grow in to a once a week class building up the kids with something positive and real as they grow with their parents. Some of the best times a lot of people remember seems to have food involved. So it just seems natural that food family Faith and fun should go hand and hand. The thought for this is to see other working Chef's and restaurateurs step in and help with some classes. We could be grooming the next Emeril Lagasse or Charlie Trotter just teaching the basics to these kids and showing them a way up to doing something that they can one day do as a living.
