American Flag Taco Dip
serves 40 people. Perfect for your patriotic party, this layered taco dip is loaded with beans, cheese, tomatoes and lots of Tex-Mex flavor. Bring it to your Veterans Post. Get the recipe here from Ralph's supermarket:
Ingredients...
4 ounces white cheddar cheese block
2 pints light sour cream
1 package (1 oz.) reduced-sodium taco seasoning mix
1⁄4 cup chopped fresh cilantro
1 large jalapeño pepper, chopped
1⁄2 cup canned black beans, rinsed or sliced black olives
2 cups small grape tomatoes, quartered or 1 jar (16 oz.) thick and chunky salsa
1 1⁄2 cups guacamole, optional
Snack Crackers or tortilla chips
Step 1...
Cut 3 slices from cheese. Use small star-shaped cookie cutter to cut 1 star from each slice. Shred cheese trimmings and remaining cheese; reserve.
Step 2...
Combine sour cream, taco seasoning mix, cilantro and peppers; spread onto bottom of 2-quart rectangular baking dish. Spread layer of guacamole over, if desired.
Step 3...
In upper left-hand corner, spoon beans or olives; top with cheese stars. Over remaining dip, arrange rows of tomatoes (or salsa) and shredded cheese to resemble flag.

Jennifer Ott
Was born in raised in Galveston County.
She is proud to call herself a BOI and graduated high school from O’Connell High School in 1994.
Jennifer knew when she graduated her dream was to become an attorney.
Jennifer went on to get her Bachelor of Science in Journalism from Texas A&M University in College Station in 1998.
After working as a Public Relations Coordinator at Moody Gardens helping open the Moody Gardens Hotel and Aquarium she decided to enroll at South Texas College of Law in Houston in 2000. While interning in the summer of 2001 for The Galveston County DA’s office she realized that seeking justice and being a voice for those who needed justice was her calling.
Jennifer Ott was licensed to practice law in November 2003.
She started as an intern in 2001 at the Galveston County District Attorney’s Office, under the Honorable Michael Guarino. Jennifer realized at that time that prosecution was her calling. She graduated from South Texas College of Law in 2003 and immediately went back to her passion, prosecution, in January of 2004.
Jennifer started as a misdemeanor prosecutor in 2004 and quickly rose through the ranks to a felony 2 prosecutor in within the same year.
She was tasked with trying major cases and became a Chief felony prosecutor in 2006.
Jennifer has always wanted to seek justice.
She has been a child abuse prosecutor, Chief felony prosecutor and had the honor of being the Chief Public Integrity prosecutor for the last five years of her service to the community. It was there that she was tasked with prosecuting public corruption cases involving police officers and public officials.
After over 18 years of Public Service and over 80 jury trials, Jennifer left the Galveston County District Attorney’s Office in 2022 because her legal and ethical standards where no longer aligned with the Office she loved and adored. When she left her beloved job, she became a criminal defense attorney to better understand the system. She had her own practice for a couple and then received the opportunity to work for Galveston County Misdemeanor Mental Health Public Defender’s Office. There she focuses on clients who are seeking mental health resources while dealing with the criminal justice system.
Jennifer is married to her husband, Jason, who has been an educator for over two decades. They live in League City and have two beautiful teenage daughters. They reside in League City and she is very active in the Galveston County Community.
Jennifer is an active member of Rotary Club of Galveston, Galveston Island Kiwanis Club, where she is President-Elect, Clear Creek Republic Women, where she is the Parliamentarian of the Board, Galveston Republican Women, and Galveston Island Pachyderm Club, where she is their legal liaison. Jennifer is also a proud President of the Board at The Independence Village in Texas City and on the Board of Directors of ADA House in Galveston. In addition, she served on the Board of the Victory Lakes Intermediate School Curriculum Development Board from 2022 to 2024. Jennifer Ott is also very proud to be on The College of the Mainland Criminal Justice Advisory Board.
