Hot Mulled “Spiced” Apple Cider (Wassail)
I don’t care what anyone says; apple cider isn’t just for fall.
The sweet and fruity flavors with delicious, warm spices are perfect from September to March (maybe even April if it’s still chilly!).
Between the cinnamon, ginger, star anise, and cloves, it’s a beautiful hot drink to keep you cozy.
You’ll also add a dash of orange juice to help lighten the overall flavor.
Fall or not, it’s divine.

THE WASSAIL INGREDIENTS
  • Apple juice: 
  • it’s best to use homemade unsweetened apple juice. If you’re using store-bought apple juice, make sure it doesn’t have tons of “extra” ingredients.
  • Oranges:
  • you’ll need both the orange juice and zest. I like smaller bits to proprly inuse. However, you could also use larger pieces of orange peel.
  • Warming spices:
  • a combination of whole cloves, cinnamon sticks, star anise, and fresh ginger. It’s best to use whole spices when possible, so they infuse the drink with flavor, without becoming grainy.
  • Water –
  • to dilute a bit the drink.

OPTIONAL ADD-INS AND VARIATIONS
  • Other citrus:
  • you can swap out the orange for another citrus including lemons, clementines, or satsumas.
  • Extra spices:
  • feel free to switch up the spices with your favorites. These all add flavor to the apple cider: nutmeg, bay leaves, black peppercorns, cardamom, allspice berries, juniper berries, coriander seeds, even hibiscus tea, etc. You could even add some vanilla extract or an opened vanilla bean.
  • Cranberries:
  • a great addition – especially around Christmas time. You can add fresh cranberries, frozen, or even just a splash of cranberry juice.
  • Sweetener:
  • though the apple juice is naturally sweet, you may find you want to add a little additional sugar. Brown sugar, maple syrup, and sugar-free options like erythritol would all work.
  • For hot Spiked apple cider:
  •  you can add rum (plain or spiced), bourbon, brandy, or even a little wine (like Madeira wine). You could also swap out some or all of the apple cider with alcoholic apple cider or use some apple brandy like Calvados.

HOW TO MAKE SPICED APPLE CIDERSTEP 1: JUICE THE APPLES
First, wash and chop the apples then pass them through your juicer.
If you’re using a blender: 

you’ll need to add a little water to the blender to help it along. Once blended, strain it through a cheesecloth, nut milk bag, or fine-mesh strainer. Peel the apples beforehand if preferred. 
Once juiced, sieve the apple juice to remove any leftover pulp and foam.
You can leave some of this inside the juice if preferred. Alternatively, check out my recipe notes section for suggestions on how to use this leftover apple pulp.
STEP 2: PREPARE THE REMAINING INGREDIENTS
Zest one of the oranges. Then juice the oranges using your preferred method. 
STEP 3: SIMMER THE SPICED APPLE CIDER
Add the apple juice, orange zest and juice, spices, and ginger to a large pot on the stove.
I also add water to dilute the drink a bit.
Bring to a boil over medium heat and reduce to a simmer.
The longer you simmer, the more intense the flavor will become so I suggest giving it a try once it’s boiled and then continuing to try every 5-10 minutes for up to an hour.

If you want a slightly less concentrated flavor then you can add a little water to your preferred level.
Once ready, serve the hot spiced apple cider in mugs.
Optionally serve this warm apple drink with a cinnamon stick and orange slices.
Crock pot/ Slow cooker apple cider: 
add all of the ingredients to the slow cooker and cook on low for 3-4 hours.
Keep on the warming function to serve at an event/party.
HOW TO STORE
Any leftover spiced apple cider (wassail) can be stored in the fridge for 3-4 days and reheated (once only) as needed.

S’mores Hot ChocolateYou won’t need a stick for these s’mores!
Instead, you get all the campfire goodness in a hot mug of hot chocolate.
These gorgeous drinks take just 10 minutes to pull together.
​ And they’re perfect for sipping around a blazing fire.

​S’mores Hot ChocolateCreamy ‘Smores Hot Chocolate with graham cracker rim and toasted marshmallows on top!

 


  • 2 cups milk (any kind // dairy-free for vegan)
  • 1 cup water (or sub more milk)
  • ¼ cup cocoa powder
  • 2 Tbsp light chocolate syrup
  • 2 Tbsp sugar
  • 1/4 tsp non-bitter stevia (or add 1-2 Tbsp more sugar to taste)
  • 1 pinch salt
  • Graham crackers (crushed // for lining rim – gluten-free for GF eaters)
  • ½ cup marshmallows (ensure vegan-friendliness)
Instructions
  • Preheat oven to low broil and move oven rack to the second from the top (high enough up to broil your marshmallows). Place baking sheet on rack.
  • Heat milk and water in a saucepan over medium heat until warmed through – about 5 minutes. Be careful not to overheat or scald.
  • Add cocoa powder, chocolate syrup, sugar, stevia and salt and whisk vigorously until thoroughly combined.
  • Meanwhile, take a few marshmallows and rub them around the top of your mugs so the graham crackers will stick. Then, dip mug in graham cracker crumbs until well lined. You could also add some graham cracker crumbs to the bottom of your mug for extra graham flavor.
  • Pour in hot chocolate and top with 1/4 cup marshmallows each. Carefully set mugs on the baking sheet in the oven and broil marshmallows until browned, watching carefully as to not let them burn.
  • Carefully remove from the oven with a towel and serve with holders or a small towel to protect hand from heat (they should cool quickly for handling). Top with a drizzle of chocolate syrup and extra graham cracker crumbs for serving (optional).
Notes* Adjust flavors before serving, adding more chocolate or sugar if you prefer.
* Also, you could add a shot of Kahlua or Bailey’s to make it a boozy hot chocolate.

What Is Christmas Punch?Christmas Punch is an absolute must for the holiday season!

It’s a delicious blend of fruit juices and soda that can be served with or without alcohol.
This large batch cocktail or mocktail is perfect for serving at Christmas parties and very easy to make!
No skills required, I promise!
Garnishes like fresh cranberries, pomegranates, and orange slices really make this drink festive and the addition of vodka or rum will add tons of extra holiday joy!
My mom always used the same base: cranberry juice, orange juice, and ginger ale. And I’ve added pomegranate juice to the mix and swapped the ginger ale for lemon-lime soda, I prefer Sierra Mist. I’ve also added pineapple juice from time to time when I want it a little sweeter.
How To Make Christmas Punch!Step 1: You can mix everything except for the soda and ice cubes ahead of time. Add the soda and ice just before serving so it doesn’t start to go flat. For best results, make sure the ingredients are cold when you mix them together so the ice lasts longer and doesn’t water down the punch.
Step 2: Add pomegranate seeds, orange slices, cranberries, and a sprig or two of rosemary to garnish (for sophistication, of course). Oh and some extra holiday spirit by way of rum or vodka and you’re in for a truly festive holiday punch.
Pro Tip: Fon an extra fun garnish, freeze orange slices, fresh cranberries, and water in a silicone bundt pan to make an ice ring!

How to make it
Like most of our popular virgin drinks, sparkling non-alcoholic drinks or good virgin drinks, this is actually pretty simple…

Step 1: To prepare the martini glass rims, lightly coat the rim of your martini cup in simple syrup on a plate

Step 2: On another plate, place the crushed candy canes then rim the glasses by dipping the glasses that have been coated in simple syrup into the candy canes

Step 3: To make the drink, simply stir together 1 C half and half, 12 oz. cream soda, 4 tsp. simple syrup and 2-4 drops of peppermint oil in a small pitcher

Step 4: Pour mixed drink into the candy can rimmed martini glasses

How to make Sherbet Ice Cream Float

Slow Cooker Peppermint Hot ChocolateHot chocolate has always been a holiday staple in my house. And this rich, peppermint version is one of my faves. 
Made in the slow cooker, this makes the whole house smell like Christmas.
And the blend of sweetened condensed milk, cocoa, vanilla, milk, cream, and crushed candy canes is to die for.

Ingredients
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup cocoa
  • 2 teaspoons vanilla
  • 5 cups milk (don’t use skim milk)
  • 1 cup heavy whipping cream
  • ½ cup finely crushed peppermint
  • Garnishes: optional
  • Whipped cream
  • Crushed candy cane
  • Marshmallows

Instructions
  • Combine sweetened condensed milk, cocoa, vanilla, milk and cream in your slow cooker and whisk together until combined. (This will take a few minutes for the cocoa to mix in.)
  • Cook on low for 2 hours or until heated through, stirring about every 20 or 30 minutes.
  • Serve with whipped cream, marshmallows, or more crushed peppermint candy (or all three!).

Notes
This can also be done on your stove top by combining all ingredients in a large saucepan and whisk until combined. Heat over medium-low heat, stirring occasionally until heated through (don't let boil).

Ingredients
  • 1 cup pumpkin puree chilled
  • 2 cups cream soda chilled
  • 2 cups spiced apple cider chilled
  • whipped cream for topping
  • pumpkin spice for topping
Instructions
  • Place pumpkin in a bowl. Add spiced apple cider and whisk well.
  • Add cream soda. Stir lightly and pour into a glass.
  • Top glass with whipped topping and pumpkin pie spice.
Notes
​
Cold ingredients work best for this drink. For a creamier punch that would be served in a punch bowl for a crowd, soften a quart of vanilla ice cream and stir the whole can of pumpkin into the ice cream. Refreeze.Add the whole container of cream soda and apple cider to a punch bowl, and then scoop the pumpkin ice cream on top of the punch. Refresh with additional ingredients as needed.

John Wayne casserole

is a scrumptious dish that can feed a crowd.
It’s full of spice, western flavor, and it’s also easy to make!
Thanks to pre-made and canned ingredients, the hands-on preparation will take you only 15 minutes.
The rest is up to the oven!
This beloved dish is packed with several layers that together, create one stunning dish.
At the very bottom is a bed of soft and pillowy biscuit crust. Don’t worry, thanks to a trusty biscuit mix, you won’t have to make it from scratch.
Next up are layers of savory ground beef, onions and green peppers, tomatoes, chilies, and a blend of sour cream and mayo. I mean, talk about the ultimate taco!
Completing the casserole is a generous sprinkling of cheddar cheese. When baked, it turns into a stunning golden crust that’s irresistibly ooey-gooey.
It only takes one bite to realize that this casserole is the one thing missing in your life



Ingredients
  • Biscuit Baking Mix – The tender crust of the casserole. You can use any brand, but I prefer Bisquick and Pillsbury.
  • Ground Beef – For that beefy, umami-packed flavor. 
  • Taco Seasoning – To transform your ground beef from delicious to drool-worthy.
  • Tomato – For a juicy, refreshing contrast to the rich casserole. 
  • Green Pepper – To give it a bit of a kick!
  • Onion – This recipe uses sauteed onions, but you can also mix in some raw onion slices for a more pungent flavor.
  • Canned Diced Tomatoes with Green Chilies and Diced Chilies – For a hot and spicy casserole.
  • Sour Cream and Mayo – The rich and creamy elements that balance out the heat from the chilies.
  • Cheddar Cheese – An integral part of any casserole. When baked, the top part turns into a crisp golden crust, while the inside is wonderfully melty.

Tips for the Best Casserole
  • The baking mix batter will be sticky, so it might be a challenge to spread it into the pan. Here’s a trick: once the batter is in the pan, place a piece of parchment paper over it and give it a good press.
  • Like many casseroles, this one is easily customizable. There’s no need to be exact with the measurements! Add more or less of the ingredients to suit your taste.
  • Feel free to add whatever mix-ins you like. I’m talking corn, olives, and jalapenos. Use taco or pepper jack cheese for more heat Here’s a simple rule: if it works in a taco, it will also work in this casserole.
  • This casserole isn’t the healthiest of dishes, so stay away from it if you’re on a diet. But if you really can’t resist the urge, you can make it a little lighter by using ground turkey or chicken instead of beef. You can also add less cheese, and use low-fat sour cream and mayo. 
METHOD
INGREDIENTS
  • 2 cups biscuit baking mix
  • 1 cup water
  • 1 pound ground beef
  • 1 (1-oz) packet taco seasoning
  • 1/4 cup water
  • 1 (10-oz) can diced tomatoes with green chilies
  • 1 green pepper, diced
  • 1/2 cup onion, diced
  • 1 (4-oz) can diced chilies
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese, divided



  • Preheat oven to 350 degrees Fahrenheit. Grease a 9×13-inch baking pan with oil or cooking spray.
  • In a large bowl, mix baking mix and 1 cup of water until combined. Spread into the bottom of the greased pan. Set aside.
  • Cook beef in a large skillet over medium heat until brown. Add taco seasoning and ¼ cup of water and cook for 3 to 5 more minutes, stirring often. Spread evenly over the baking mix batter. Top with canned diced tomatoes.
  • Cook green pepper and onion in a skillet over medium heat until the latter is translucent, about 5 minutes. Top mixture over diced tomatoes. Spoon canned diced chilies on top.
  • In a bowl, combine sour cream, mayonnaise, and 1 cup of cheese until blended. Spoon over diced chilies. Sprinkle remaining cheese.
  • Bake for 30 to 35 minutes or until cheese is melted. Let it sit for 5 minutes to set before slicing. Enjoy!
