Chef Paul Mendoza and his Culinary Arts students invited faculty, staff and the general public to join them for a spring scholarship luncheon on March 20 in the Mary Moody Northen Center Atrium at Galveston College.
The students presented a delightful garde manger buffet with a variety of appetizers and savory bites.
The buffet project was the culmination of the students’ study of charcuterie products such as sausages, pates and terrines, as well as smoking and curing of meats/fish, hors d’oeuvres, salads and condiments.
They students also served a beautiful array of sweet items for dessert, including hummingbird cake, lemon cake, and a variety of muffins, cookies and bars.
